Perhaps no other food product epitomizes the traditional American diet like peanut butter. It is carried to school every morning with children in lunches, often chosen over other lunch options because simplicity and the lack of need for refrigeration. It complements multiple other snack foods as an essential ingredient and is often applied directly by consumers as toppings on fruit like bananas or apples. The presence of peanut butter and other peanut products is so far reaching in the American diet that recent recalls have startled the public and again shaken consumer confidence in the safety of our food supply. While peanut butter and associated products likely appear to consumers as a simple, basic food product, the complexity of the process and microbial ecology and survival is daunting.

This IAFP Rapid Response Symposium will bring together leading experts and stakeholders on this topic for a science-based discussion on the latest findings from the recent peanut products outbreak. Considering the current environment, are peanut products safe? Are current measures adequate to ensure safety of these products? What are the best risk management strategies that can be applied to further reduce risk?
