Workshop Description

Artificial intelligence (AI) is rapidly transitioning from experimental concept to practical tool across food safety systems. This full-day pre-meeting workshop is designed to help food safety and quality professionals understand not only what AI can do, but how to meaningfully integrate it into day-to-day workflows. Rather than focusing on high-level theory, the workshop highlights real use cases showing how AI is already being deployed across government, academia, and industry.

Participants will explore applications such as using generative AI to support audit preparation, applying machine learning models to identify HACCP hot spots, and monitoring supplier and ingredient risks through predictive intelligence. Through a blend of keynote presentations, interactive case study sessions, hands-on educational exercises, and facilitated peer discussions, the workshop provides a practical pathway for building AI capability and literacy.

A central theme is developing an “AI culture” within food safety organizations—bridging technical understanding with human, educational, and organizational factors that influence successful adoption. Participants will learn basic GenAI prompt-engineering techniques, walk through scenario-based forecasting exercises, and discuss strategies for building confidence and skill in AI-enabled decision making.
